いろんな農産資源や植物資源を材料に、発酵技術を駆使して、麹菌を使ったモノづくりをする・・・
自然に生きる生物をうまく利用して、新しいものを作り出す技術。そんな方法があったのか！と目から鱗のアプローチで、大変勉強になりました！
